Description: The overarching goal of this project is to assess the relationship between the food environment, food insecurity, and health behaviors in NH Hispanics during the COVID-19 pandemic in order to inform the development of resources, future interventions, and programming. This study is being conducted in collaboration with UNH Cooperative Extension (extension.unh.edu) and the Carsey School of Public Policy (carsey.unh.edu).

Fiber-rich foods, weight status, and the gut microbiota: A comparative study in NH Hispanic adults at risk for food insecurity

Description: The objective of this project is to quantify the relationship between access to fiber-rich foods, fiber intake, and components of the gut microbiota-gut-brain axis in NH Hispanic adults in households eligible for the Supplemental Nutrition Assistance Program (SNAP). This study is being conducted in collaboration with UNH Cooperative Extension (extension.unh.edu) and the Hubbard Center for Genome Studies (hgcs.unh.edu).
