The final capstone course of the SDM is a project-based experience. Interdisciplinary teams are formed and collaboratively work with an external mentor on local, sustainability-based projects. My project team worked on “From Pandemic Responses to Sustainable Food Systems Solutions”. We researched the impacts of COVID-19 on the food system and conducted interviews with conscious consumers about their participation with local food. Our work contributed to a larger research initiative, informing a proposal for a USDA grant. My knowledge of the food system has vastly expanded through participating in this project, for me, SUST 750 has been a cumulative experience for my SDM path – combining what I have worked on in the core classes and electives. I also learned a great deal about working on an interdisciplinary team – accenting on the importance of communication and highlighting the unique perspective that each member brings to the team!
