2021_Williams_EcoGastronomy

The first elective I took for the SDM was actually taken before I was part of the SDM. I took EcoGastronomy, initially for an ETS credit, but once I declared the SDM I was able to apply it as an elective. EcoGastronomy is an interdisciplinary field that examines the interconnectedness of our food system with economic, environmental, and social influences. This course was where I first heard "sustainability" defined in an academic setting and where I learned about the SDM. I was struck by how a course that was so focused on food and agriculture was able to effortless weave in social issues and analyze them. As an English major, I felt that I still had something to contribute and take away with a humanities perspective.
